What you need

1lb Little Black Pig sausage meat

4 medium sticks of rhubarb

1 small onion finely chopped

 A tablespoon of good local honey

4oz porridge oats

A little light cooking oil

How you do it

First boil the rhubarb in a little water with a tablespoon of honey - until the rhubarb is soft. Drain off any excess liquid so you just have the rhubarb mush - put it into a large mixing bowl.

Melt your onion in a little oil (as little as you can get away with) once its soft and transparant add the onion to your rhubarb in the bowl.

Roll up your sleeves and add your sausage meat and mix into the onions and rhubarb.

Add your porridge oats and mix thoroughly.

Divide into 6 and make into patties - try to make them a reasonably even depth so they cook through nice and evenly.

Add a little oil to a frying pan and cook on a fairly low light so you can be sure they are cooked all the way through when brown on the outside. Cooking time will depend on your thickness, but about 3 minutes per side should be about right
