What you need

1lb Little Black Pig sausage meat

A bunch of porridge oats

1 medium onion

Herbs and seasoning to taste

How you do it

Stick your oven on at gas mark 4 or about 200 if you're electric.

Melt the onions in a little butter in a frying pan on a low flame - wait until they've gone all soft and see-through. Add your favourite herbs - or a good dusting of mixed dried herbs. Set the pan aside.

Roll up your sleaves. In a bigish mixing bowl put the sausage meat. Add a mugfull of oats and work them into the sausage meat with your hands. Then add your herby onions and another mugfull of oats and work these in. Keep adding oats until the sausage meat won't accept any more - its hard to explain but you'll know when you're there.

Grease a 2lb loaf tin. Put your mixture into the loaf tin. Stick it into the oven and cook for 25-35 mins....basically until the top goes crispy looking. When you take it out of the oven run a palet knife around the edge of it but leave it to set for 5 minutes before turning it out.
